Eos Cabernet Shiraz

Penley Estate Eos Cabernet Shiraz, named after the Greek goddess of dawn, draws from Coonawarra's unique terra rossa soils: a thin band of vivid red earth overlaying soft limestone.
These mineral rich, free draining soils coupled with the region's cold winters and long, cool ripening season allow the grapes to ripen slowly and fully.
The wine is comprised of roughly equal amounts of Cabernet Sauvignon and Shiraz. The fruit ferments in headed down open fermenters, which submerge the grape skins to extract maximum colours, flavours and tannins.
Malolactic fermentation and maturation take place in new and seasoned French oak for 16 months. After an additional six months in stainless steel, the wine is bottled.
Inky garnet, Penley Estate Eos Cabernet Shiraz is dense without being heavy, driven by a savoury, earthy tannin profile. Cellaring potential is 20 years.
